Mavrique Alcohol-removed fine wine is exactly that: real fine wine with just the alcohol taken out. We wanted to take a moment to address the most common questions we get about alcohol-removed fine wine: What is it? How is it made? Isn’t it just fruit juice and flavors? 

Mavrique starts with luxury-tier California fine wine, then gently removes the alcohol using forward osmosis. What's left is a two-ingredient wine — dealcoholized wine and grape concentrate.

What is alcohol-removed fine wine? So glad you asked! 

It is fine wine. Period. We start by carefully selecting the wine from the California growing regions (appellations) that are best known for our varietals. It starts with harvested grapes that are crushed and fermented to become wine. The wine is aged in oak barrels, blended and fined and is just about ready to be bottled as traditional luxury-tier wine. Then we extend the winemaking process by gently removing just the alcohol. That's a delicate process, because we want to make sure that the varietal aromas, characteristics and flavors are still present in the wine after the alcohol is extracted.

 

Why we don't start with a 'base' wine

Notice we didn't say we started with a fine "base" wine, which would imply that we'd need to add things like flavorings, juices, sugars, chemical stabilizers and essences back to the "base" after the de-alc to achieve a flavor profile. Many non-alcoholic wines or wine beverages are made by recipe formulation – which you can see when you look at the list of ingredients on the label. This approach fits for some styles and price points…there is room for many variations of non-alcoholic beverages!

But that's not the road we've chosen. We start with excellent wine and then continue the winemaking process to remove the alcohol (and the associated sugars and calories!). And how do we do that? Well, there are several technologies that have been around for a while (i.e., spinning cone, vacuum distillation) but these use heat and pressure and alter the flavor of the wine. 

Then there are some newer technologies that dramatically improve the quality. Some of these have a two-step process, where alcohol and aromas are extracted then separated, and the aroma layer is added back to the wine. All of these technologies are rapidly improving, but we've chosen an exciting emerging technology that is brand new to the world of wine.

How we remove the alcohol: forward osmosis

It's a very gentle process that doesn't heat or pressurize the wine and doesn't take out the aromas. It's called forward osmosis, and it basically entices or attracts the alcohol out, leaving all the aromas and flavors intact in the wine, so we don't have to use additives to "fix" the flavor.

So no, our alcohol-removed fine wine is not wine-flavored juice. When you look at our label, you will see a very short list of ingredients: dealcoholized wine and grape concentrate. It is wine with an extended winemaking process. Mavrique Wines are finely crafted luxury wines with just the alcohol removed. Period. We think you will taste the difference.
